Beef liver is rich in nutrients, especially the highly absorbable heme form of iron. Soak it in milk prior to cooking to tone down the flavor. Cook it hot and fast like a steak (a little pink in the middle!), and smother with onions, gravy, and homemade mashed potatoes.
