An old-fashioned and always fun snack option! Homemade popcorn is easy!
In a heavy stainless 8-12 quart soup pot with a lid, heat 2 Tbsp coconut oil or lard AND 3 corn kernels over medium-high heat with the lid on. Meanwhile, have ready 1/2 cup of popcorn. As soon as at least 1 or 2 of the "test kernels" pop, add the rest of the measured popcorn and replace the lid. Gently but firmly shake the covered pot every few seconds to keep the kernels from burning. You should begin to hear vigorous popping. Continue frequently shaking the pot until you begin to hear fewer pops. Remove pot from heat when pops slow to a second between pops. Carefully remove lid (watch out for the steam!) and pour the kernels into a large bowl. Add 1/2 stick of real butter to the hot pot to melt, then pour over the popped kernels in the bowl and stir to mix. Add sea salt to taste while stirring. Serve warm!
