You are welcome to specify in the special requests box at checkout which kind of fat you prefer. If we have it, we'll do it! However, the types of pork fat are essentially interchangeable, so we'll supply whatever's in stock when you order unless you have a strong preference.
Leaf fat comes from the inner body cavity near the kidneys of the pig and tends to be higher in saturated fat, making it firmer and more crumbly than back fat. Both types are interchangeable, but leaf fat will result in flakier pastry in general. Pastured pork fat has the added benefit of being rich in vitamin D!
Back fat is the most plenteous fat in the pig and comes from near the skin. It makes a lovely, pliable soft-ish fat that is perfect for pastries or for replacing vegetable oil in recipes. Pastured pork fat has the added benefit of being rich in vitamin D!
