Pork Head comes whole and skinned and is useful for homemade broth, scrapple, tamales, and head cheese. It may not be the prettiest cut, but it is rich in gelatin and makes a lovely broth!
Size: These vary a lot by animal, but most of them should fit nicely into a 4-5 gallon stock pot. They do come whole and skinned but tenderize after an hour or two of simmering and make a wonderful broth with lots of meat to pick to use for scrapple, head cheese, confit, etc.
