This is the "filet" of the pig--while a small muscle (much smaller than conventionally-raised), it is perfectly tender and delightful and does best with rapid cooking methods like grilling or pan-searing until the center is 165F. It is a long, narrow muscle with a round-ish cross-section, and can be grilled whole or sliced into medallions. One of our top sellers!
