Beef Heel of Round Roast

This roast also goes by "Pike's Peak." Lots of intramuscular marbling and collagen. Slow-cook it for an exquisitely tender and flavorful roast. Boneless. ~2-5 lb each. Request size at checkout if desired.

Heel of Round is similar to Roast Roast and does well with slow, moist heat. Add some homemade broth or water during cooking, and give it a long, slow cook.
