British Christmas Cake is a years-old and much-anticipated tradition in our house! Matt describes its invention this way: "They took all the most intense ingredients they could think of: dried fruit, butter, molasses, nuts and almonds, apple juice, and brandy, and made a cake out of it!"
With some coaching from friends of British heritage, Jerica developed her own method for Christmas cake that is free of artificial colors, hydrogenated seed oils, preservatives, and other ickies that have unfortunately crept into modern commercial British-style food-manufacturing. Actually... we think this version is much tastier, anyway!
Yes, there is just a nip of brandy in each cake to keep with tradition. Slice it thin and serve with coffee because it's very rich and a little goes a long way! Each cake should serve at least 10-16 people!
