What is a fermented vegetable?? It is a raw veggie that is fermented in a brine (salt + water or natural veggie juice such as cabbage juice) to allow the lactobacillus probiotic bacteria to thrive and produce beneficial lactic acid and enzymes that both preserve the veggie for a super long time, and make the fibers, starches, and phytocompounds in veggies easier for humans to digest. Our kids LOVE fermented vegetables and prefer them to all other forms of veggies. They are gut-friendly, probiotic, highly nutritious, and are very convenient for getting fresh vegetables in at each meal. We can't say enough good things about them!!
